Ingredients for
4 persons:


500 gr. Silgen catfish fillets without skin

1 tsp coriander seeds

500 gr. potatoes

100 gr. butter

6-8 sage leaves

30 gr. starch

200 gr. flour

150 gr. punk crumbs

300 gr. pickles

1 small head onion

4-5 pieces of dried tomatoes

1/5 tsp brown sugar

half bunch of parsley

The catfish fillet is pre-salted, twisted with a little oil and coriander seeds and set aside.


The potatoes are cut into cubes, cooked in salted water, then pureed with 80-100 gr. of butter, 6-8 pieces of sage leaves are finely chopped on a small, heated butter and added to the puree, then mixed.


The catfish slices are rolled into a mixture mixed with starch, fine flour, and water and then into a crumb of panko and in a large oil for approx. Bake at 170-180 degrees until golden brown.


The sour cucumber is finely chopped with the onion and dried tomatoes and run over a little fat. Lighten with brown sugar on the acids, allow to caramelize a little, and sprinkle with parsley at the end and allow to cool.
