600 g. Silgen catfish fillet with skin (cut into 4 pieces)
1 small red onion
1 clove of garlic
2 tbsp olive oil
1 tsp tomato paste
200 gr. crushed canned tomatoes
100 ml. vegetable broth
3 large tomatoes
1 eggplant
2 zucchinis
2 peppers
Herbs to taste
Salt & Pepper
Cut the onion and garlic into fine pieces and sauté in a small saucepan with the olive oil. Add the mashed tomatoes and vegetable stock and simmer for 5 minutes.
In the meantime, slice the vegetables. Arrange the vegetables in a ring shape in a casserole dish, season with salt and pepper. Pour the tomato sauce over the vegetables.
Season the catfish fillet on both sides with salt and pepper.
Place in the middle of the casserole dish and place in the oven at 180 degrees for 40 minutes.
Serve with baguette or fried potatoes.
